Bitchin’ Inspiration: Bennies!

Celebrate the Saucy mamas in ya life with these Bitchin' Bennies! Served with a motherly amount of Cilantro Chili B-Sauce and resting atop poached eggs, salmon lox and avocado, you'll be sure to remind her that you're still the favorite. Bitchin' Mother's Day!
Bitchin' ingredients:
2 eggs
2 English muffins
2 cups fresh arugula
¾ lb salmon lox
Cilantro Chili Bitchin’ Sauce
minced cilantro
3 tbsp olive oil
3 tbsp lemon juice
water
vinegar
Bitchin' Directions:
Poached Eggs 101
1. Crack eggs individually into small cups
2. Simmer water in a pot with a splash of vinegar. Swirl until whirly, then gently pour one egg into the whirlpool. Repeat for each egg
3. Simmer the eggs for about 3 minutes- don’t boil. Use a slotted spoon to harvest your poached beauties
4. Repeat steps 1-3 because this is hard and you’ll probably need to try again (we did)
Assembling the Benny
1. Mash Avocado with Cilantro Chili Bitchin’ Sauce to desired mush level. Spread thick layer onto your freshly toasted English Muffin
2. Toss the arugula with lemon juice and olive oil, then place over the avocado mash
3. Top with salmon lox, poached egg, a big spoon of Bitchin’ Sauce, and a sprinkle of minced cilantro. Serve immediately to the nearest mom
